MAY 2012

We are in the month of May already, wow, where does the time go! That is the question every day, every hour that we ask ourselves, right?  My mom's birthday is in May and we called her and wished her Happy Birthday.  I still miss her so much but that is part of my life.  Only now I know what it must feel like for her to be away from her child :(  I love the fact that Nicholas knows the Skype sound and lights up tremendously when he sees his grandma on there :)

My first mother's day was really special.  We just had a simple morning out to Dunkin' Donuts and then spent the day home together.  





We had lunch and dinner and it was lovely.  It is amazing how your priorities change as far as "wanting" certain things or the fact that you need to have a significant gift on certain occasions but we have always tried to do the nontraditional things and just either make our gifts or just go out to the park and do stuff like that.  Of course, if we could afford to splurge, we do, as most would but I appreciate the little things in life as well.  In fact, without those little things along the way I would not be where I am or who I am today.

Nicholas will be 11 months old on Monday! He is truly a miraculous child.  He brightens my days and nights in more ways than I could have ever imagined!  Not a day goes by that I do not thank God for him :)  He is doing so well, learning more and more every day.  We read to him and spend as much time as we could with him.  He has his own sweet personality of course.  He loves spending most of his day at the front door looking outside.  I know once he starts walking we will be outside for hours and hours.  He has been cruising around the house from chair to chair to window sill to the doors and everything else haha! It won't be long now.



Paul has been so wonderful with him.  I started back work last week and do so on evenings and Saturdays.  He takes care of him for the most part while I work and then of course I take care of him while Paul works during the day.  We both get him ready for bedtime.  It has become like a play that gets acted out every evening.  I draw the bath, get the clothes and room ready, give him a bath while Paul gets his bottle ready and turns on the fan, shut the doors and turn of the lights in the living room and put Queenie in our room with her food.  After the bath, we both get him ready and then Paul puts him down while I clean everything up, pick up all the toys, tidy up the kitchen, if it needs it and then head back to the office.  The best time of day is after work when we both get comfy and start watching our shows and catching up.



Our house is still on the market for sale and we hope it sells but if not, we will see what happens next.  Things are looking up for us and we couldn't be happier.  My next entry will be tearfully monumental because it will be when my little boy has his first birthday :)

ADDICTIVE COFFEE ICE CREAM


INGREDIENTS

1/2 cup of granulated white sugar
1/2 cup of brown sugar
1 can of evaporated milk
1 cup of whole milk
2 cups of heavy whipping cream
1 tablespoon of vanilla extract
2 tablespoons of instant espresso powder (Medaglia D'oro)

METHOD

Whisk the first 4 ingredients together until the sugars are dissolved.  Then add the last 3 ingredients and stir well.

Pour mixture into your ice cream machine*.

Follow the instructions of your ice cream machine and let churn until thickened. Transfer to freezer safe container and let freeze for up to an hour before serving.

Tip: For a chilled mixture, put the heavy cream and evaporated milk in the freezer for about 30 minutes before mixing :)


*I use an electric ice cream machine that uses a freezer bowl.
